My mother made me a g...I used to love stuffing too. My mother made me a gluten-free stuffing last year with cornbread -- she used the Bob's Red Mill GF cornbread mix (plus celery, onions, etc.). It was good, though I've since given up on that mix because I think it contains sorghum. <br /><br />I was thinking a pork roast could make a good sub for turkey, but I don't have a recipe handy.
